Pav Bhaji

Pav Bhaji I guess needs no Introduction. It is famous street food, loaded with veggies. We are in love it.My husband can practically eat it in all the meals! This is my take on Pav bhaji. Its easy loaded with veggies and super quick!

Ingrediants

Green Peas
Cauliflower
Bell pepper
Cabbage
2-3 Potatoes
3 Tomatoes
4 tbsp Pav Bhaji Masala ( I use MDH)
Kashmiri chili
3 tbsp Tomato puree
Oil

Procedure

Wash and cut the veggies except tomatoes and pressure cook it for about 3 whistles with little Salt.

Once done, open the cooker and mash the veggies completely with a hand blender or better use a masher.

Now take a pan add in sufficient oil and add in grated ginger , saute for a min and add in finely chopped bell pepper and add in tomatoes and all the seasoning , add in little water as required and Add the tomato puree. In case you don't have puree you may add little extra tomatoes.

Let the mixture boil well to get such nice gravy. Let it cook till tomatoes start almost melting.

Now add in till mixture to the boiled veggies and mix well and bring it to boil.
Serve it some butter and pav.. thats the key.. the perfect bread with it enhances the taste! For my Pav recipe you can click here.

Veg Kadai

This is one of many gravy I make. We  love eating this Tandoori roti or Naan for nice Sunday lunch. You may eat it with your choice of bread.  This recipe serves 2-3 easily

Ingrediants

2 1/2 Tomatoes
2-3 Green Chilli
About half inch Ginger
Handful Cilantro
1/4 Piece of Bell Pepper
1 tsp dhanya powder/ coriander powder
1 tsp fennel seed powder,
2 tsp kashmiri chili powder/ paprika

Assorted Veggies of you choice about 2 cups
I have used Following
Red & Green Bell Pepper, Beans, Carrots, Cauliflower, Peas

Procedure

Take tomatoes, cilantro, green chilis and ginger and a piece of red bell pepper and Steam it till tender or you can microwave for about 2-3 mins.

Half portion of Pav or you make take 1 slice of bread. ( I used my a piece from my homemade Pav/Bun). Add about a tsp of dhanya powder, fennel seed powder, kashmiri chili powder. Add everything in the blender and make a fine puree.

Cut the required veggies into dice shaped.

Take a pan, add little oil and Saute all the veggies one by one in order of cooking time. Beans ,followed by cauliflower, carrot and bell pepper and peas. Let it cook for about 7-10 mins. Add a pinch of salt and chili powder to it. Once done keep it aside
You may par boil the veggies for faster cooking.

Add little kasuri methi ( dried fenugreek leaves). Liitle bit of honey or a tsp spoon of sugar. Bring it to nice boil

See the difference in the color once it starts to boil. If your paprika does not have nice red color, you may add little grated beetroot, I prefer to use natural colors.

.
Now add the veggies to the gravy just before serving.

Do try it out and like my page if your are inspired. Thanks!

Fansi Dhokli- French Beans with Wheat Balls

Fansi Dhokli  where Fansi is the French Beans and Dhokli's are flat balls made out of wheat. It is traditionally a dish from Gujarat, a state in India. This is my take on my MIL recipe of Fansi Dhokli. This can be served hot with nice Fulka/Roti/Chapati. My husband personally likes the drier version instead of the curry. So here you go a simple food for simple days!

Ingrediants

Abt 30 French Beans
3 cups of water
1 tsp cumin seeds
1 tsp chili powder
1/2 tsp garam masala
1/2 Tomato or 2 tbsp tomato puree (optional)

For Dhokli

2 Tbsp Wheat Flour
1 Tbsp heaped Besan/ Chickpea Flour
Pinch of Ajwin
1/2 tsp Turmeric
1/2 tsp Chilli powder
1/2 tsp Coriander powder
pinch a Eno or fruit salt or citric acid
1 tsp oil
pinch of salt
water as needed

Procedure

Make a hard dough mixing all the ingredients for Dhokli and let it rest for some time.

In the meanwhile wash and cut french beans into small pieces. In a pan then add a bit of oil, cumin seeds, ajwin and cut beans and all the dry ingredients mentioned above. Saute for couple of mins then add about 3 cups of water and let it cook on medium flame.

Now while the beans are cooking, divide the dough into 3 equal parts and roll it to follow long form noodle kind of thing and then cut it into several small pieces. Then flatten each of them between your fingers into small round flat balls. They need to be small and thin.

Now once the water starts boiling add them slowly to the beans and let it cook on slow flame for at least 15 mins or until the dhokli is cooked. I like to add a bit of tomato puree when its about half done. You can skip it totally. I however like the tangy flavor

We we like the drier version i cook till entire water is evaporated. You need to keep some water in it since the dhokli keep absorbing the water.

Njoy with nice weekday lunch.

Lasagna Rolls

Lasagna Rolls

This Lasagna Rolls is an outcome of some leftover Lasagna I prepared in the morning. I was too bored to eat the Lasagna loaded with cheese for dinner, so gave tried  this rolls which are much lighter with cheese. The best part is you can substitute it with whatever you have in your fridge.

Ingredients

6 Lasagna Sheets

For Stuffing

1 Tbsp cream cheese
Handful of Spinach
1/2 Cup Broccoli
4-5 Grape/Cherry Tomatoes
Salt
Pepper

For Sauce

1 cup mix vegetables chopped
1/2 cup diced Tomatoes
1 cup Tomato puree
1 cup Water

Procedure

Boil/Microwave Lasagna sheets in water adding bit of salt and oil for about 7-8 min or until juts about tender. Do not overcook. Once done lay it on a sheet so that they don’t stick to each other.

Sauce:
Sauté mix veggies of your choice. I used the frozen veggies pack (corn, peas, carrot, beans) , to that add diced tomato. Mix well. Add about 1 cup of tomato puree/sauce. And a cup of water, add seasoning and bring it to boil.

Stuffing:
Steam and chop broccoli then mix cream cheese, chopped spinach to it.Add salt pepper, oregano and give it a good stir. Microwave for abt 30 secs to a min.

Assembly

Preheat the oven at 350 Deg F.
Spread the mix on the Sheets and place some cut grape tomatoes. Roll the sheets and pour the sauce over it.  Cover the bowl with the aluminum foil,  Bake the rolls at 350 for about 15 min.

Serve it warm. Enjoy!!
