Kale Chole Masala

Since long time I wanted to introduce Kale in our meals after looking at its health benefits. But we are not much in smoothie stuff so was looking out for some variation. When I came across this veggie mix in frozen section and it was then it stuck me with this idea. So here goes much version of Kale Chole curry- Garbanzo beans in Kale and tomato gravy.





Ingrediants

1 cup Beans.
About 2-3 cups of Kale leaves
1 tomato
Little more than 1/4 cup Milk ( optional)
Grated ginger
2 tsp Chole Masala( I use MDH masala)
1 tsp Chili powder
1 tsp Coriander powder
Salt
1 tsp Kasuri Methi( Dry Feenugreek leaves)

Procedure

 Wash and Soak the beans in water over night.



Now take a pressure cooker, add oil . Once heated add the grated ginger , tomatoes and chopped Kale leaves and Saute it till they turn tender.


Now add all the spices and milk and Soaked Beans and Mix well. Now add in Milk and Water about 2 cups/ as required and Pressure cook for about 3-4 whistles. Let the pressure cool of and Tada.. your yummy curry is ready!!

Junka/Pitla- Bell pepper Chickpea curry

This dish traditionally belong to interiors of Maharashtra. What a perfect blend of spices and taste great when eaten with freshly made Bhakri ( Indian version of making flat breads) For recipe of Rice Bhakri click here. Made of chickpea flour mainly. You can play around with the veggies that goes into its making, But this is what I like.



Ingrediants

Roughly chopped Green and Red Bell Pepper
1/2 Tomato
1 chopped green chili
1/2 cup Besan/ chickpea flour
About 2-3 cups of water
turmeric powder
chilipowder
cumin
coriander powder
Salt to taste
pinch of garam Masala powder


Procedure

 Take a bowl  and add chickpea flour to it and about a cup of water and mix it well till no lumps are formed.


Now a take skillet add little oil to it. Add a tsp of cumin seeds, and then add green chili to it, Add a pinch of Hing/ astefotedia and now add the veggies in it and saute it for about 5 min, Add the spices to it. Now pour in the besan batter and water about another 2 cups of water to it, simmer the stove and let it cook for  about 10 min on medium flame.

Add sufficient water to it so that it can boil and cook properly, else the besan will taste raw and also we are looking at curry consistency so add water accordingly.




Server it piping hot!!

Paneer Butter Masala

I love Paneer and this is one of the various ways I love to make it. Paneer Butter Masala, this is mild, extremely creamy delicious and flavorful dish. Kids and Adults love it. This dish is always on our menu be it any party or just a family dinner.  Unbelievably easy to make!





Ingrediants

2 Tomatoes
2-3 Green Chilli
5-6 Cashew nut
1/2 cup heavy Whipping cream
Panner
1 tsp Red chili
1 tsp Cumin powder
1 tsp Ginger Powder
Garam Masala
1 tsp Sugar ( optional)
1 tsp Kasuri Methi
Salt to taste

Procedure

Take a pan, add Tomatoes, chili, Cashews and let it cook till the tomatoes are mushy, else you may just microwave them for about 3 mins.
In case you are preparing for bulk ( party) the best way is to pressure cook them for about 3 whistles.


Once done add, add ginger powder, cumin powder , Kashmiri chili powder and blend it into fine paste. Add water as needed. In case you don't have ginger powder , you may add a small piece of ginger instead.


Now take a pan , add some Butter to it and add in the puree. You may choose to sieve it, to re move any uncrushed particles. Bring it to nice boil.



Now add the fresh cream to it. I choose to add heavy whipping cream. Add salt , sugar and Paneer to it. I have used my fresh home made paneer. Add a pinch of Garam masala and Kasturi methi in the end. Let it boil for another 5 mins.



Serve it nice and hot with your choice if bread or rice!

Malai Methi Matter

Malai Methi Matter as the name suggest is Fenugreek and Green Peas in rich Cream. This creamy mildly sweet and spicy dish is quick gravy to go with any breads/ roti or Rice. It took me about less than 20 mins to make this !!




Ingrediants:

The list is pretty much what visible in the pic below
About 1 medium bunch of Fenugreek/ Methi
1 Cup Green Peas
8-10 cashew
2-3 Green chili ( per spice level)
1-2 Cloves
1/4 cup Whipping cream or fresh cream
1-2 Cups of water
1 tbsp oil



Procedure:

Take a wok , add little oil , once heated , saute chopped Fenugreek for few secs, just about tender and add the green peas. And let it cook for about 5 min.

In the mean time , grind the cashews, green chili and cloves to a fine paste.Add water as required. Now add them to the wok and let it cook for 5-6 min. Add another cup of water to it .Due to cashew the gravy starts thickening. Add About little less than 1/2 cup milk or You may add Heavy whipping cream after some time. If you add milk, it needs to boil and thicken. But if you choose to add cream , it doesnt need much of cooking. Off the flame , add Salt per taste and a tsp of sugar (optional)

Gobhi Bhurji


Bhurji is a term generally associated with egg, But for vegetarians like me this is a great option in this yummy version of Bhurji using cauliflower.. This is my take on our own desi version of Gobhi Bhurji!!



Ingredients

About 2 cup of Grated Cauliflower
Chopped Red, Green Bell pepper
1/2 chopped tomato
1 Green chili
1/2 cup green peas
1/2 tsp Grated ginger
Turmeric powder
chili powder
Coriander powder
Pinch of Garam Masala ( optional)
Cilantro
1/2 tsp Lemon juice


Procedure:

Wash and Grate cauliflower 


Chop all the veggies as mentioned in the ingredients.



In a pan , heat little oil, sautes all the veggies one by one.




Add all the spices as mentioned above and give it a good stir



Add the grated cauliflower , salt ,cilantro and juice. Cover it and let it cook for another 7-8 mins. Dont let it go mushy. Off the gas and serve it hot with your choice of bread!

Shahi Chole

Chole channa- Garbanzo beans I feel is a versatile Bean. There are so  many different ways to cook them. This is one of the way in which I make them. There are other varieties which goes well with Chat or Puri. This is taste best with Naan , roti  or Paratha, It taste great with Rice as well. This recipe is adapted from my SIL. I have made this version for a temple function for about 80 ppl, I did gather lots of praise.
 So here you go with my version of quick 20 min yummy Shahi Chole :)



Ingrediants

1 cup Garbanzo beans
2 medium sized Tomatoes
1 Tbsp Cashewnut
1 tsp Sesame seeds
1/2 tsp Garam Masala
1 tsp Kashmiri Chili powder
1 tsp Pav Bhaji Masala ( I use MDH or Everest masala)
Abt 1 tsp Kasuri Methi ( dry Fenugreek leaves)
Oil
Water


Procedure:


Wash and soak garbanzo beans overnite. You may also choose to soak it in hot water for about 3-4 hrs. Pressure cook the beans in little salt for about 3-4 whistles.




In a bowl take roughly chopped tomatoes and cashew and Microwave them for about 3 min. Or cook over flame till tomatoes are tender.



Now mix all the spices as mentioned in the ingredient list apart from Kasuri methi and blend it to form a smooth paste.



In a skillet, add oil, Add the puree and about 1 1/2 cup water and bring it to boil. Adjust salt accordingly. Drain the water from the cooked beans and add them to gravy. Let it cook for another 10 mins at least. Add hand crushed Kasuri methi and mix. Garnish with cilantro and serve with your choice of bread.



Tada.. its done. Yummy Creamy Shahi Chole is ready!!

Sambhar

Sambar is a delicacy of South India. It is one curry which goes extremely well with Rice, Idli , Medu vada , Dosas or Uttapam. Every house has its own version of sambar. This is my quick version of sambar and that how I always prefer making. Here is my version of Healthy Quick Sambar.


Ingrediants

1/2 cup Toor Dal/ yellow pigeon peas
1 cup assorted veggies of your choice.
I have used the following : Opu, Red Pumpkin, Yam
Red Chilli Powder
Turmeric powder
Sambar Masala ( I use the MTR or 777 Sambar Masala)
1 tbsp Tamarind

For Tempering

2 Tbsp Clarified Butter/Ghee
2 tsp Mustard seeds
1 tsp Cumin Seeds
pinch of Hing
4-5 Fenugreek seeds 
2-3 Dry Whole Red Chilli


Procedure

 Wash and soak the toor dal for about 5  min. 


Chop the veggies and keep aside. You make take some more veggies like potatoes, tomatoes, brinjal, carrots. But this is wat I prefer to use mostly.



Since my husband is picky eater lolzzz so I need to hide the veggies and I feel its the best way as well, even I don't like those soggy veggies coming my way in sambar. If you want the veggies to be seen well. You may pressure cook both separately and then mix them.
In a pressure cooker , mix the dal,veggies, add little salt, red chili powder and little turmeric and cook for about 3-4 whistles or about 15 -20 mins. 



Once the pressure is cooled open the lid. This is how it would look. Mostly the veggies would have dissolved. You may even use a hand blender to mix it well or leave as is.



Add about 3 tbsp of Sambar Masala. This is the closest I find to the homemade ones.



Mix well.



Take about a 1 tbsp of tamarind and keep it in the warm water. The pulp starts to form once the it softens. Add the tamarind water to the sambar by squeezing it well.

Add enuf water till you attain the desired consistency of the Sambhar. Keep the Sambhar to boil for atleast 15- 20 mins.


For Tempering: In a small vessal , take ghee once hot enuf, add all the ingredients mentioned above. And it to the sambar.


 
Serve Steaming hot with anything you like!!
