Sabudana Khichdi

Sabudana Khichdi is basically consumed during days of fasting. They are nice delicious soft and spongy texture. You can just have them as your breakfast or evening snack. You may just add some veggies of your choice on any regular day. But this recipe below is purely made for fasting days wherein there is restriction on what you can consume.

Ingrediants

1 Cup Sabudana/ Sago/ Tapioca Pearls
1 Potato Boiled
1/2 cup Roasted Crushed Peanuts
2-3 Green Chili
About 2 tsp Cumin Seeds
Handful of cilantro
1 Lemon Juice
Salt
1 tsp Sugar( Optional)

Procedure

Soaking the sabudana is the most important step. Wash them throughly and keep them soaked in water for about 6 hrs ideally but you make keep them in hot water covered for about 4 hrs minimum. They should soft, dry and spongy after soaking. Dont add too much of water while soaking. Water should be just above it

Now to it add , salt , sugar and Crushed peanut powder. I always have a store of roasted and crushed peanut handy. Mix it into the sabudana and keep it aside. You need to add salt little more than you generally like.

Now in a pan add little ghee( clarified butter) I prefer making my fasting food in ghee, you  may even use regular cooking oil. Once hot enough add the cumin seeds, green chilis or ginger chilli paste , saute it and add in the Sabudana mixture to it stir it well , Add boiled potatoes lightly mashed to it.This is how my hubby prefers. You may instead choose to light saute the potatoes as well the oil and the add sabudana mixture to it.  Let it cook for atleast 10- 15 min. Do not Stir it often. Keep it on slow to  medium flame. When done. Add some chopped cilantro on it. You may squeeze some lemon juice on it. It gives a mildy, spicy - sweet - sour flavor.

Coconut-Peanut Chutney

This is my favorite chutney on fasting days. Goes superbly with sabudana vadas. This actually teams up very well with Maharastrian snacks like Kotambir Vadi (coriander patty) as well. They take me back to my childhood days eating at the Aswad and Prakash hotels at Mumbai. So here goes the recipe..

Ingredients

1 cup coconut( I used Sliced one)

About less than 1/4 cup peanut
6-7 green chillis ( as per spiciness)
About 1 inch Ginger
Salt per taste

Procedure

Mix all the above ingredients, add water as needed and grind it into a coarse paste. Wasn't this easy peasy. Enjoy it your choice of food.

Sabudana Vada-Baked / Shallow fry

Sabudana/ Sago Vada

Sabudana or Sago are traditionally consumed during fasting or vrats. Sabudana Vada are basically deep fried snack. However with this Baked version of vada indulge in some guilt-free treat even on your non-fasting days.

I have also included my another alternative to deep frying is using the appe pan using minimal oil about 1 tsp oil for each. I tried doing both of these versions on separate days and we liked both. With Baked just keep it in oven and your are free to do other stuff, with appe pan you still be closer to your cooking range. But trust me both are equally good.Try out either of the versions.

                           using appe pan                                                                   Oven Baked

Ingredients

2 cups Soaked Sabudana( 1 cup pre-soaked)
1 Large Boiled Potato
½ cup Crushed peanut
Handful of chopped coriander/cilantro
½ Lemon Juice
Salt as per taste
1 tsp Sugar
1 tsp Cumin seeds
Chopped Green Chills

Procedure

Step1: Soak Sabudana/Sago in hot water for 5 hrs. Water just enough to submerge the Sabudana/ Sago. Mix all the ingredients and lightly mash them well.Wet your hands while making balls to give it a smooth finish.

Using Appe Pan

If you are using the appe pan or going for the traditional approach for deep frying make medium size balls .

Checkout the amount of oil used making them. Simply Superb!!

For Baking:

Mix all the above ingredients and make Round Flat Patty instead of round balls.
In the meanwhile Preheat the oven to 400 Deg F. Place these patty on the baking tray lined with baking sheet. Bake for about 50-55 mins and turn over half way.

Enjoy you hot crispy vadas with some coconut-peanut chutney. Click on the link to follow the recipe

Tips: I generally wet my hands while making patties and then apply oil on hands to rub against the patties, so that there is a  thin coating of oil on the patty.
