Cabbage Cutlets- Dhanger

Cabbage I feel is such a versatile vegetable and can be used in so many ways. Every week I get cabbage in my grocery but very rarely do I use it for making the traditional subji from it. I love eating them in various forms. These cutlets also known as Dhanger which is basically cutlets made from them. They are very quick and easy. Eat them with ketchup or chutney or as a side dish with your rice. I just love to eat them as is. For variation you can add in chopped onions along with it.
Do try them out, you will surely love it.




Ingrediants

Cabbage
1 tsp of chopped ginger
Cilantro handful
Red chili powder
Turmeric powder
Coriander powder
Salt to taste
Besan / chick pea flour to mix
 Semolina/ Sooji/Rava  ( optional ) to coat

Procedure

 Take some chopped cabbage. You don't need to chop them fine. Just cut them coarsely.
Add ginger , cilantro and the rest of the spices and salt. Squeeze it well, then add in the flour to the cabbage slowly to make mushy mixture. Add water as necessary.

Take a pan, add little oil. Now you can shallow fry them in 2 ways, one is just wet your hands, take a fistful of batter and press it down on the pan directly. The flour will act as binding for the cabbage and then turn over once it is completely cooked on one side. Sorry I could not take as many pictures as I generally do since baby was so fussy that day!



Serve them with chutney or ketchup.. They are super yum!!

Chocolate Custurd Pudding

My blog VegetarianFlavors completed 1 year.Yay!! One Milestone. Thank you so much for appreciating the work. I promise to not disappoint you. I really hard a hectic day today, but still had to find out time to celebrate this special day.So I had to do something real quick. I love custurds and pudding, so thought of trying my hand at it. Its so simple that it took hardly 10 min of prep time. I did  refer to a fellow blogger Nisha Sarda for her chocolate pudding recipe. It looked really tempting.

So here goes my quick desert recipe, make it ahead of time for your guest and I am sure they would be wooed :)




Ingrediants

Custurd Pudding

2 cups milk
3 tbsp Custurd powder
1-2 tbsp Sugar

Chocolate pudding

1 1/2 cup Milk
1 tbsp CornFlour
1 tbsp Cocoa powder
1-2 tbsp Sugar


Procedure

For Custurd pudding: 

Boil 1 cup of milk and in another glass add the custurd powder to another cup of warm milk. Mix it well so that there are no lumps. Now add this mixture to the the milk and bring it to boil. Keep stirring it well so that no lumps are formed. Once it starts thickening turn off the gas and pour it into glass/ see thru glasses. Do not fill it full. 



Let it cool and keep it refrigerated and enjoy with Jelly or fresh fruit or continue to next step.

For Chocolate pudding:

Take a vessel, add the milk, cornflour , cocoa powder and sugar. Mix it well so that no lumps are formed. Adjust sugar if you are using sweetened cocoa powder. Now keep it on heat, medium to high. Keep stirring it well, make sure it does not burn, because it's the last thing that should ever happen. It will ruin the taste. Keep mixing it till it thicken. Do not thicken it too much , as we are going to refrigerate it and it will thicken even more. Keep it little pour able consistency. 


Once the custurd is lightly cooled, pour this over it and then refrigerate it again for at least 2 hrs to let it set. Serve it chilled.

Corn Bruschetta

I am sure many of you are aware of what a Bruschetta is. It is antipasto which is basically a snack or appetizer from Italy made by grilling the bread and topping it with your choice of vegetable and seasoned with olive oil and salt.
Whenever I go to supermarket, the smell of freshly baked breads somehow pulls me towards it. I generally prefer baking them at home. But this time I just picked up a French bread. As soon as I saw it I knew what I was making then. You can actually use any type for bread, but this particular one and most importantly the way you cut it makes all the difference; else it would just another open faced sandwich.

Mostly you would see tomatoes with herbs as a topping and the toasted bread, but I this time add another ingredient to it. Yes.. as you can see, its the corn.






Ingredients

For Topping:

Chopped Tomatoes
About a cup of corn.
Basil
Salt & Pepper
Chili Flakes

Bread( French Loaf)
Cheese Spread( Optional)
Olive oil

Procedure:

Mix all the ingredients for the topping. Slice the bread as shown in the pic. This what makes it stand as a separate dish.


In the meanwhile preheat the oven to 350F.
Now spread the cheese on the slices and place a spoonful of the topping on each one of them. Sprinkle with some chili flakes.



Place the tray in the oven and let it back for about 10-12 mins, till the slices are nice and toasted. Remove from the over and add a dash of olive oil over each. and serve them warm.
Works great a easy snack or lovely party appetizer.



Notes:
If you do not have oven, just toast the slices separately. Slightly saute the topping in the separate sauce pan and place it over the bread.

Peanut Dry Chutney

We all love the dry Red chutney that goes with the Vada Pav ( click here for my delicious Vada recipe)..Peeps from Mumbai will definitely be able to relate to it. It contains garlic and sometimes dry coconut in it. However now at my hubby's place we do not eat Onion or Garlic in any form. So this peanut chutney is  the best substitute for it. This recipe is from my Mother in law. For the longest time she used to send it from India or courier it, or even when she used to visit us she would make it in bulk so that it would last us for at least 6 month until I get the new lot from her ..lol
I never bothered to ask her how to make it,I was just lazy somehow..until finally I realized how easy this recipe was. The best of part of this chutney is it goes well with any dish. 








Ingrediants

2 1/2 cup Peanut( Roasted)
1/2 cup Sesame seeds
1/4 cup cumin seeds
About 1 cup red Chili powder
about 1 tbsp Salt
about 1 tsp Black salt


Procedure


Grind coarsely roasted peanut. Let the peanuts cool completely before grinding them. Now grind the cumin and sesame together to fine powder.



Take this in a big bowl. Add the chili powder, salt and black salt and Mix it well. Adjust the chili according to you. You may use Kashmiri chili powder if you are not the very spicy type of person...and Tada...The dry chutney if ready. Store it in the air tight container in the refrigerator. It stays for months.



It is my togo chutney in the busy mornings. I spread it over the dosa with ghee to make spicy masala dosa, or add it to my dhokla's or make a dipping with yogurt. This can be consumed on days of fasting as well.

Stir Fry veggies with Cracked Wheat

Firstly I need to apologize to all my readers, for not being active on blog for such a long time. But growing baby kept me busy. So after lot of people asking about my new updates finally, trying to squeeze in time for all you lovely folks!
Cracked wheat is very nutritious dish which can be prepared in multiple ways. Enjoy it in as appetizer, snack, salad, main course or even dessert! Today's recipe I have made several times with various variation. This is one of them. I have used Beans, Broccoli and Bell pepper today, but it taste great when you add Kale in it as well.






Ingrediants:
(Your choice of veggies for stir fry)
Broccoli
Beans
Bell Pepper
Cracked Wheat


Procedure:

There is variety of cracked wheat available in market. I have used the thick variety one. Rinse and add extra water and keep it on flame. Let it cook for till they become nice soft and fluffy.

Take pan,add Olive oil and stir fry the beans till the are tender, add broccoli and bell pepper. Add salt, pepper and seasoning depending on the taste.




Now mix in the cracked wheat in it and saute for another 5-6 mins. And Serve hot as is or you choice of curry!

Extremely delicious, quick and energy packed meal!

Tortilla Rollups

This is extremely easy appetizers. You can make them ahead of time for large groups. Totally delicious and your guest would surely love it. This is complete no mess appetizer. Do try them out!


Recipe adapted from Bhavna's Kitchen




Ingrediants

Soft Tortilla
Cream Cheese
Colored Bell pepper ( optional)

Procedure

Keep the cream cheese at room temperature. I have used flavored Smoky chipotle cream cheese. You may even use the basic plain cream cheese and add finely chopped bell pepper and some crushed black pepper. Mix it well.



Now take a tortilla and generously spread the cream cheese over it. Now roll them tightly. Stick the loose end with some extra cheese and cut them into 1" rolls. And Tada your roll ups are ready !!





You may refrigerate them ahead of time and bring them to room temperature before serving.

Malai Methi Matter

Malai Methi Matter as the name suggest is Fenugreek and Green Peas in rich Cream. This creamy mildly sweet and spicy dish is quick gravy to go with any breads/ roti or Rice. It took me about less than 20 mins to make this !!




Ingrediants:

The list is pretty much what visible in the pic below
About 1 medium bunch of Fenugreek/ Methi
1 Cup Green Peas
8-10 cashew
2-3 Green chili ( per spice level)
1-2 Cloves
1/4 cup Whipping cream or fresh cream
1-2 Cups of water
1 tbsp oil



Procedure:

Take a wok , add little oil , once heated , saute chopped Fenugreek for few secs, just about tender and add the green peas. And let it cook for about 5 min.

In the mean time , grind the cashews, green chili and cloves to a fine paste.Add water as required. Now add them to the wok and let it cook for 5-6 min. Add another cup of water to it .Due to cashew the gravy starts thickening. Add About little less than 1/2 cup milk or You may add Heavy whipping cream after some time. If you add milk, it needs to boil and thicken. But if you choose to add cream , it doesnt need much of cooking. Off the flame , add Salt per taste and a tsp of sugar (optional)

Phirni

I made this yummy dessert for the occasion of  Khojagiri Pornima. This came out so yum, that I was craving for some more!! My LO tasted it and he simply loved it. He was left asking for more. Unfortunately I could not give him more since hes too small. Made with just 3 Basic Ingrediants



Ingrediants

About 2 1/2 cups Milk
2 tbsp Rice
Sugar per taste

For flavoring

Dryfruits mix powder and little kesar/safforn

Procedure

Soak rice in little water for about 15 mins. In the meantime bring the milk to little boil.




Now ground the soaked rice into a coarse paste.


Once the milk is boil, simmer the gas and slowly add the rice paste to it and keep stirring and occasionally. Slowly the mixture will thicken , Keep steering.

Now add the dry fruit mix powder ( cardamon, pistachios, almonds and little saffron). Give it a good stir. When the consistency of the milk has turned to thicker one like that of condensed milk ,Now slowly add sugar and turn off the heat. For this quantity of Phirni, it took me about 12-15 mins on a slow- medium flame.


Let it rest for couple of mins and transfer them to serving bowls and refrigerate for at least 2-3 hrs or until chilled.

Serve it chilled after a lovely dinner!
