Chocolate Custurd Pudding

My blog VegetarianFlavors completed 1 year.Yay!! One Milestone. Thank you so much for appreciating the work. I promise to not disappoint you. I really hard a hectic day today, but still had to find out time to celebrate this special day.So I had to do something real quick. I love custurds and pudding, so thought of trying my hand at it. Its so simple that it took hardly 10 min of prep time. I did  refer to a fellow blogger Nisha Sarda for her chocolate pudding recipe. It looked really tempting.

So here goes my quick desert recipe, make it ahead of time for your guest and I am sure they would be wooed :)




Ingrediants

Custurd Pudding

2 cups milk
3 tbsp Custurd powder
1-2 tbsp Sugar

Chocolate pudding

1 1/2 cup Milk
1 tbsp CornFlour
1 tbsp Cocoa powder
1-2 tbsp Sugar


Procedure

For Custurd pudding: 

Boil 1 cup of milk and in another glass add the custurd powder to another cup of warm milk. Mix it well so that there are no lumps. Now add this mixture to the the milk and bring it to boil. Keep stirring it well so that no lumps are formed. Once it starts thickening turn off the gas and pour it into glass/ see thru glasses. Do not fill it full. 



Let it cool and keep it refrigerated and enjoy with Jelly or fresh fruit or continue to next step.

For Chocolate pudding:

Take a vessel, add the milk, cornflour , cocoa powder and sugar. Mix it well so that no lumps are formed. Adjust sugar if you are using sweetened cocoa powder. Now keep it on heat, medium to high. Keep stirring it well, make sure it does not burn, because it's the last thing that should ever happen. It will ruin the taste. Keep mixing it till it thicken. Do not thicken it too much , as we are going to refrigerate it and it will thicken even more. Keep it little pour able consistency. 


Once the custurd is lightly cooled, pour this over it and then refrigerate it again for at least 2 hrs to let it set. Serve it chilled. 


You will love it.

Oats Almond Cashew Cookie

I love experimenting with baking variety of cookies at home. My LO is a huge fan of Biscuit n cookies.So instead of feeding him store bought one I prefer making them at home.At least I can control  what goes into it and the joy of eating these goodies at its freshness is beyond words.
This is one of the zillion ways in which I make them.
I have used the regular Quaker oats, dry roasted and roughly grind them. Here goes my version of Oats Almond Cashew cookie.






Ingredients

1 1/2 cup of powdered oats
1/2 cup grounded cashew and Almond powder
1/4 Cup Ghee ( clarified butter)
1/3 cup of brown sugar
2-3 tbsp of Honey ( Adjust sweetness as per your taste)
1/4 tsp Baking soda
1/4 tsp Baking powder

Procedure:


  1. Preheat the oven to 325F.
  2. Take a bowl mix the ghee and sugar and whisk it.
  3. Now add honey and rest of the ingredients.Mix it well till it forms a manageable dough.
  4. Grease your Palm and Make small balls and flatten them. Place them on a baking try lined with a sheet/ parchment paper.
  5. Bake them at 325F for about 18-20 mins till lightly golden brown. Remove them on the wire rack , let it cool down, then store it in a air tight container. Njoy for the rest of the week. Do give it a try and let me know how it went for you.

Malai Peda

This is such a delicious variety of Peda. They are just melt in mouth. They are ready in such a short time. This method first makes Khoya and them peda are made from them.

Ingrediants

Less than 1/4 cup Butter ( you may use little less than this as well)
1/3 cup Milk Powder
1/3 cup Milk
1/3 cup Homemade Paneer
1/3 cup Sugar ( As per your taste)
Cardamon Powder for flavoring



Procedure:

Melt Butter in pan. Once done add milk , milk power and stir well. Now add the paneer/ cheena to it and keep stir it so that now lumps are formed.





 I have used homemade paneer. This peda taste best when using fresh paneer. Keep stiring it till you get nice sticky dough like consistency. Stir it well, ensure it doesn't not stick to the bottom of the pan. It would take some where around 10-15 mins.




Once lightly warm. Add the powdered sugar and cardamon powder to it and mix it well.



Apply some ghee to your palms and roll them into ball. Lightly flatten them using you thumb and garnish with nut of your choice.

Phirni

I made this yummy dessert for the occasion of  Khojagiri Pornima. This came out so yum, that I was craving for some more!! My LO tasted it and he simply loved it. He was left asking for more. Unfortunately I could not give him more since hes too small. Made with just 3 Basic Ingrediants



Ingrediants

About 2 1/2 cups Milk
2 tbsp Rice
Sugar per taste

For flavoring

Dryfruits mix powder and little kesar/safforn

Procedure

Soak rice in little water for about 15 mins. In the meantime bring the milk to little boil.




Now ground the soaked rice into a coarse paste.


Once the milk is boil, simmer the gas and slowly add the rice paste to it and keep stirring and occasionally. Slowly the mixture will thicken , Keep steering.

Now add the dry fruit mix powder ( cardamon, pistachios, almonds and little saffron). Give it a good stir. When the consistency of the milk has turned to thicker one like that of condensed milk ,Now slowly add sugar and turn off the heat. For this quantity of Phirni, it took me about 12-15 mins on a slow- medium flame.


Let it rest for couple of mins and transfer them to serving bowls and refrigerate for at least 2-3 hrs or until chilled.

Serve it chilled after a lovely dinner!

Quick Rice Kheer/Pudding

I have a sweet tooth. So when my husband asked me to make his favorite Khari puri for lunch to have with tea. I had to make something for me to have with that puri. Ans what better than the kheer to go with it! I do make different variations of Rice kheer, but this one is the quickest of all.

Ingrediants

Handful of Rice
2 Cups Milk
Dry fruit mix powder


Procedure

Wash and soak rice in water for about 10 mins.


In  the meanwhile bring the milk to boil. Once done add the rice to it and let cook for about 15-20 mins till the rice is well cooked. Keep stirring occasionally. After about 20 mins, check for the grain of rice, You should be able to mash it easily with you fingers. On OFF the flame and let it rest for 5-7 mins. Then add Sugar as per your sweetness level. Add chopped dryfruits or some kesar. Serve it hot or warm!!

Instant Coconut Burfi

Coconut Burfi is one of the quickest and yummiest dessert to make. I used to eat them at the temple celebration. Its my husbands favorite. He generally likes to eat sweets but never asks anything upfront. But when I made them for janamastami this year he was asking for more. Do I need to say more? This goes a quick easy yummy desert!! You can just eyeball the measurements. I tried to measure what I added to give a estimate. This makes about 25 balls.

Ingrediants

About 200 grms Sweetened Condensed Milk ( Half tin)
2 Cups Dry desiccated coconut/coconut powder + 2 Tbsp for rolling 
1 Tbsp vanilla essence (optional)
1 tsp ghee ( clarified butter)


Procedure

Let all the ingredients be at room temperature. Take a bowl add the dry desiccated coconut. Add few drops of vanilla essence and mix well. 


Do not add all the coconut , save some for rolling the balls. Slowly add the condensed milk to the coconut. Stir continuously while adding. 


You need to add the condensed milk only till a point that you can roll them. Mix it well. 


Now apply ghee to your hands and lightly roll it into small balls. 

And then roll it against the remaining coconut to coat it evenly. 



Let it rest for sometime and Serve. You can prepare them in advance and keep refrigerated. Keep at room temperature before serving. Super easy and quick desert ready in few minutes. This  hardly takes 15 mins.

Mix Dryfruit Laddu

I am surprised at this post. I never liked dry fruits and people who know me will know what I mean. I guess Motherhood teaches you to do everything for your sweet little one. After having baby, I knew I need to have that extra strength to nourish him and to run behind him. So presenting  this full of energy and power packed food with a secret ingredient. It wont be secret anymore.. I am going to Open it!! Great source for Lactating Mothers , New moms and why leave behind the Old Moms!! Its for everybody. This is dedicated to all the Non- Stop Engine, Heart of Home!!

The secret ingredient is Gond also known as Gunder, Dink, Gum. Easily available in Indian Stores. Check out the pic below, if you haven't seen it. I am now in Love with this Dry fruit laddu. So Tasty , and so crunchy!!








Ingrediants


1 1/2 cup dates ( khajoor)
1/2 cup cashewnut( kaju)
1/2 cup almond
2 tbsp raisins
1/2 cup dry desicated coconut
2 tbsp gonder( dink)


Procedure


Dry roast almond and cashew and roughly chop them or lightly blend them to a coarse mixture. Do not make fine powder. 




Now in a tsp of ghee roast the gunder till its nice and crispy.These stone looking substances fluff up like popcorn, they turn brittle. Now crush them. They should be cooked well else they stick in the teeth.

                                                      This is raw gunder




See How they puff up on roasting.


Saute Raisins for few seconds.




Now roughly chop the dates.In a pan add little ghee and keep mashing the dates so that they don't stick to bottom.Keep mixing and mashing with spoon till it turns tender.It takes about 5-7 mins to turn tender.




Mix all the nuts and gunder, Give its a little crush together. If you wish you can crush it bit more. But I love the crunch.



Now mix the crushed nuts into it and Add the coconut and mix well and cook for another 5 mins. OFF the stove and let it cool for a min or 2.  Coconut is great for lactating mother.






Apply little ghee to hand and make small balls out of it.Do not wait till the mixtures cools.











Yummy delicious healthy ladoos are ready. It has nice soft and crunchy texture. Eat one each day as your power snack. I am sure you cant stop at one haha.
