Green Cilantro Peanut Chutney

This green cilantro chutney or dip is very basic chutney found in every household. It goes very well with breads and cutlets

Here is my take on recipe


Ingrediants

1 bunch cilantro
5-6 green chili
1/2 inch ginger
1/3 cup peanut
1 tsp cumin seeds
4-5 mint leaves or 1 tsp dried mint leaves
Salt per taste
1/2 lemon juice
1/4 inch green bell pepper

Procedure:

Mix all the ingredients in blender. Add only little water as needed and blend well to a smooth paste. You can store it in freezer for about 3 weeks. Just thaw it before use. However taste best when fresh. Enjoy with breads, patty or dosa of your choice.

Fansi Dhokli- French Beans with Wheat Balls

Fansi Dhokli  where Fansi is the French Beans and Dhokli's are flat balls made out of wheat.It is traditionally a dish from Gujarat, a state in India. This is my take on my MIL recipe of Fansi Dhokli. This can be served hot with nice Fulka/Roti/Chapati. My husband personally likes the drier version instead of the curry. So here you go a simple food for simple days!

Ingrediants

Abt 30 French Beans
3 cups of water
1 tsp cumin seeds
1 tsp chili powder
1/2 tsp garam masala
1/2 Tomato or 2 tbsp tomato puree (optional)

For Dhokli

2 Tbsp Wheat Flour
1 Tbsp heaped Besan/ Chickpea Flour
Pinch of Ajwin
1/2 tsp Turmeric
1/2 tsp Chilli powder
1/2 tsp Coriander powder
pinch a Eno or fruit salt or citric acid
1 tsp oil
pinch of salt
water as needed

Procedure

Make a hard dough mixing all the ingredients for Dhokli and let it rest for some time.


In the meanwhile wash and cut french beans into small pieces. In a pan then add a bit of oil, cumin seeds, ajwin and cut beans and all the dry ingredients mentioned above. Saute for couple of mins then add about 3 cups of water and let it cook on medium flame.

Now while the beans are cooking, divide the dough into 3 equal parts and roll it to follow long form noodle kind of thing and then cut it into several small pieces. Then flatten each of them between your fingers into small round flat balls. They need to be small and thin.




Now once the water starts boiling add them slowly to the beans and let it cook on slow flame for at least 15 mins or until the dhokli is cooked. I like to add a bit of tomato puree when its about half done. You can skip it totally. I however like the tangy flavor

We we like the drier version i cook till entire water is evaporated. You need to keep some water in it since the dhokli keep absorbing the water.

Mix Bean Patty

How about a wholesome meal or a burger patty? I am so very fascinated with patty and different variety of cutlets that many days we end up eating just them as our dinner. Today I made this patty loaded with proteins and flavors of veggies. This one try it out with chutney or as burger patty, I am sure you will love it.

Ingredients

1/3 cup Garbanzo Beans
1/3 cup Red Beans ( Rajma)
1/3 cup Brown Channa
1 Stick Celery
1/4 cup chopped Green and Red Bell Pepper
1 Boiled Potato
1 tsp Red chili powder
2 tsp Coriander powder
Half Lemon Juice
Salt as per taste
1 tsp Ginger chilli paste

For Frying

1 tbsp rice flour
Oil for frying






Procedure

 Soak the mixed pulses in warm water for about 5-6 hours. Then cook in pressure cooker with extra water and salt for about 4 whistles. They should be completely cooked but not very mushy.
Once cooked drain the excess water and mash it coarsely. To it add the rest of the ingrediants and mix well.
Make medium size round flat patty. Make a thin paste from rice flour by adding water. Lightly coat the patty with the paste and shallow fry.



I love using my electric griddle for my patty since they use negligible amount of oil.

Spinach Filled Ravioli

Spinach Filled Ravioli

Being a vegetarian, it is very difficult to find veg ravioli in market. And yes I love Italian food, so I decided to make ravioli at home for my Little Ones 6th Month B'day celebration. It was just awesome. It is a bit of process but trust me worth every effort.


Ingrediants

For Dough

This makes about 15-17 pieces
¾ cup Flour
1 Tbsp Soften Butter 
Few Tbsp of Ice cold water
Salt

For Filling

1 Bunch Spinach
2 Tbsp Cheese ( I used mexican four cheese)


Procedure

Step 1 : 
Blanch 1 bunch of Spinach and chop it small. Add to it cheese, salt pepper, and seasoning and let it cool for some time.

Step 2:
Mix all the ingredients for Dough to form soft dough and let it rest for at least 0.5 hour to 1 hour

Step 3:
Divide the dough into 2 parts and
Roll it as thin as possible. 
Using a cookie cutter or any mold 
and make equal rounds like puri. 
Place the filling one each of them 
and then place another small sheet on it. 
Seal the edges applying some cold water 
and press it using a fork.

Step 4:
Take a pot of boiling water and add these stuffed sheets into the boiling water. Let it cook for about 3 mins. Once done they will start to float up. Immediately transfer then to another pot of cold water.

Ravioli is ready. You can store them in fridge for a day to two. Make sauce of your choice and serve it warm.

Serving : Place ravioli , sauce and cheese  and Bake it in oven at 350F for 20mins or Make white sauce and pour over it and sprinkle with some cheese.

Lasagna Rolls


Lasagna Rolls

This Lasagna Rolls is an outcome of some leftover Lasagna I prepared in the morning. I was too bored to eat the Lasagna loaded with cheese for dinner, so gave tried  this rolls which are much lighter with cheese. The best part is you can substitute it with whatever you have in your fridge.

Ingredients

6 Lasagna Sheets                           

For Stuffing

1 Tbsp cream cheese
Handful of Spinach
1/2 Cup Broccoli
4-5 Grape/Cherry Tomatoes
Salt 
Pepper

For Sauce

1 cup mix vegetables chopped
1/2 cup diced Tomatoes
1 cup Tomato puree
1 cup Water

Procedure


Boil/Microwave Lasagna sheets in water adding bit of salt and oil for about 7-8 min or until juts about tender. Do not overcook. Once done lay it on a sheet so that they don’t stick to each other.

Sauce:
Sauté mix veggies of your choice. I used the frozen veggies pack (corn, peas, carrot, beans) , to that add diced tomato. Mix well. Add about 1 cup of tomato puree/sauce. And a cup of water, add seasoning and bring it to boil.

Stuffing:
Steam and chop broccoli then mix cream cheese, chopped spinach to it.Add salt pepper, oregano and give it a good stir. Microwave for abt 30 secs to a min.

Assembly


Preheat the oven at 350 Deg F.
Spread the mix on the Sheets and place some cut grape tomatoes. Roll the sheets and pour the sauce over it.  Cover the bowl with the aluminum foil,  Bake the rolls at 350 for about 15 min. 

Serve it warm. Enjoy!!
