Ingrediants
Abt 30 French Beans
3 cups of water
1 tsp cumin seeds
1 tsp chili powder
1/2 tsp garam masala
1/2 Tomato or 2 tbsp tomato puree (optional)
For Dhokli
2 Tbsp Wheat Flour
1 Tbsp heaped Besan/ Chickpea Flour
Pinch of Ajwin
1/2 tsp Turmeric
1/2 tsp Chilli powder
1/2 tsp Coriander powder
pinch a Eno or fruit salt or citric acid
1 tsp oil
pinch of salt
water as needed
In the meanwhile wash and cut french beans into small pieces. In a pan then add a bit of oil, cumin seeds, ajwin and cut beans and all the dry ingredients mentioned above. Saute for couple of mins then add about 3 cups of water and let it cook on medium flame.
Procedure
Make a hard dough mixing all the ingredients for Dhokli and let it rest for some time.
In the meanwhile wash and cut french beans into small pieces. In a pan then add a bit of oil, cumin seeds, ajwin and cut beans and all the dry ingredients mentioned above. Saute for couple of mins then add about 3 cups of water and let it cook on medium flame.
Now while the beans are cooking, divide the dough into 3 equal parts and roll it to follow long form noodle kind of thing and then cut it into several small pieces. Then flatten each of them between your fingers into small round flat balls. They need to be small and thin.
Now once the water starts boiling add them slowly to the beans and let it cook on slow flame for at least 15 mins or until the dhokli is cooked. I like to add a bit of tomato puree when its about half done. You can skip it totally. I however like the tangy flavor
We we like the drier version i cook till entire water is evaporated. You need to keep some water in it since the dhokli keep absorbing the water.
