Stuffed Karela

Karela/ Bitter Gourd has not been on my fav list, But its Ok to indulge in them once a while. I always thought to lessen the effect of bitter taste I need onion but since I now dont use Onion I felt kind off helpless. But with this recipe I now make it more than often. We just love it!  This makes about 6 stuffed Karela.


Ingredients

About 6 Karela ( Bitter Gourd)
2 Tbsp Tomato Sauce
Handful of cilantro

For stuffing

2 tbsp Coriander powder
1 tbsp sesame seeds
2 tbsp Crushed peanut
1 tbsp coconut
2 tbsp Besan ( chickpea flour)
1 tsp Red chilli
1 tsp Mango powder ( amchur)
1 Medium size Boiled Potato

Procedure


Wash and cut the ends of the Karela. I like to scrap of the roughness of it to give it a smoother texture.





Once all scraped. Make a slit on it. Do not cut it open fully. It should still be intact on one side.


Now using ur thumb remove all the seeds from inside and make nice cavity.

Soak all the karela in salt water for about 10 min. Keeping it in salt water helps to remove excess bitterness from it. In the meanwhile make the stuffing



Take about a medium size potato and boil it or microwave it for about 4 mins.




In a bowl take all the ingredients for the stuffing and mix well..





Squeese out the excess water from the karela and Steam it for about 10 mins or microwave it for about 4 mins, till just about tender.



Now generously fill in the stuffing inside.




Now let it cook for 15 min on the skillet or non stick pan. You may cover the pan for faster cooking




You may eat it just as is. But I like to go one step further, this gives it that extra zing! Now add some chopped cilantro.

About about 2 Tbsp of tomato puree on hot skillet and just roughly coat the karela on it. Since the skillet is hot theres not gravy all but yet some tanginess to you dish. 




You can have this with Roti or as a side dish. But honestly I simply love eating just as is!!
