Veg Kadai


This is one of many gravy I make. We  love eating this Tandoori roti or Naan for nice Sunday lunch. You may eat it with your choice of bread.  This recipe serves 2-3 easily






Ingrediants

2 1/2 Tomatoes
2-3 Green Chilli
About half inch Ginger
Handful Cilantro
1/4 Piece of Bell Pepper
1 tsp dhanya powder/ coriander powder 
1 tsp fennel seed powder, 
 2 tsp kashmiri chili powder/ paprika

Assorted Veggies of you choice about 2 cups
I have used Following
Red & Green Bell Pepper, Beans, Carrots, Cauliflower, Peas


Procedure



Take tomatoes, cilantro, green chilis and ginger and a piece of red bell pepper and Steam it till tender or you can microwave for about 2-3 mins.







Half portion of Pav or you make take 1 slice of bread. ( I used my a piece from my homemade Pav/Bun). Add about a tsp of dhanya powder,fennel seed powder, kashmiri chili powder. Add everything in the blender and make a fine puree.




Cut the required veggies into dice shaped. 



Take a pan, add little oil and Saute all the veggies one by one in order of cooking time. Beans ,followed by cauliflower, carrot and bell pepper and peas. Let it cook for about 7-10 mins. Add a pinch of salt and chili powder to it. Once done keep it aside
You may par boil the veggies for faster cooking.



Add little kasuri methi ( dried fenugreek leaves). Liitle bit of honey or a tsp spoon of sugar. Bring it to nice boil





See the difference in the color once it starts to boil. If your paprika does not have nice red color, you may add little grated beetroot, I prefer to use natural colors.

Now add the veggies to the gravy just before serving.
